If you saw my Black Forest Trifle, you’ll know that I am a fan of quick and easy desserts that don’t take too much time to throw together.
My Cheater’s Cheesecake recipe is perfect for using up fruit, can be made with just about anything and is really simple to make (it has to be, otherwise I probably wouldn’t do it!)
Pack of digestive biscuits
Selected fruit – I went for strawberries and bananas
1 tub of creme fraiche (300ml)
1 tub of mascarpone
Crush the digestive biscuits and line the bottom of your dish. Meg and Eli loved helping with this – we put the biscuits into a plastic bag and hit them with a rolling pin. Just be careful not to overdo it or the biscuit bits will stick together and you’ll have a nightmare freeing them from the bag!
Slice up your fruit and do a layer of one, then a layer of the other.
Mix the creme fraiche and mascarpone together and pour over the top of your fruit.
Drizzle with chocolate sauce, or melted chocolate, and pop in the fridge until ready to serve.
This tasted delicious and got the seal of approval from both Meg and Eli. I think it would be a great way of getting your kids to try new fruits, especially if you mix it with something they already like and recognise.
